The juice is put into clean casks in a cool cellar, and the casks filled within about four or five inches of the bung, and the bung put on loosely. The gas escapes, but the wine does not run over. In from two to four weeks, generally, the fermentation ceases, and the wine clears ; then fill up the casks and tighten .the bungs. In February or March, rack off into clear casks.
